Mum's Spaghetti Sauce

500g mince (1lb ground beef)
3 tbsp oil
1 clove of garlic
1 tsp salt
1/8 tsp pepper
1 tin tomatoes (anything - dices or whatever)
1 tin tomato paste (7oz)
1 tsp chilli powder
1 tsp worchestire sauce
1 tbsp sugar

Cook the beef and garlic until brown. Add tomatoes, tomato paste, salt, pepper and sugar. Simmer for 45 minutes. Add the chilli powder and worchestire sauce and simmer for another 15 minutes. Serve with pasta.

Slow Cooker Beef Stroganoff

1kg mince (2lbs ground beef)
2 cloves garlic, minced
1 can mushrooms, drained
2 1/2 tsp salt
pepper
1 can consomme soup
3 tbsp tomato paste
1 1/2C sour cream mixed with 4 tbsp flour

Brown the meat. Add garlic and mushrooms. Put in the slow cooker and add all remaining ingredients except sour cream and flour. Stir thoroughly. Cover and cook for 6 hours on low. Add sour cream and flour 1 hour before serving. Serve with rice.

Slow Cooker Teriyaki Steak

1kg boneless chuck or skirt steak
1 tsp ground ginger
1 tbsp sugar
2 tbsp oil
1/2C soy sauce
1 clove garlic, crushed

Slice steak thinly (or dice it). Combine remaining ingredients in a small bowl. Place meat in slow cooker; pour sauce over. Cover and cook on low for 6-8 hours. Serve with rice.

Carrot Pineapple Muffins

1 1/2C flour
1C sugar
1 tsp cinnamon
1 tsp baking powder
1 tsp vanilla
1/2C crushed pineapple
1 tsp baking soda (bi-carb soda)
1/2 tsp salt
2/3C oil
2 eggs beaten
1C grated carrot

Sift dry ingredients. Make a well and add oil, eggs, carrots, pineapple and vanilla. Beat well. Bake 20-25min @ 350 degrees (175-180F.

Beef Lasagna

1kg mince
1 1/2 tsp mixed herbs
1 jar of pasta sauce
lasagna noodles
garlic

White Sauce:
3C full cream milk
5 tbsp corn flour
1-2C cheese
3 tbsp butter
nutmeg

White sauce - melt butter, stir in corn flour, take off heat, add milk slowly, put on medium heat. Stir continuously until thick, add cheese. Cook mince and add sauce and herbs. Layer 1 - meat, layer 2 - noodles, layer 3 - meat, layer 4 - sauce, then 2, 3, 4, 2, 3, 4 etc. Finish with sauce. Bake @ 200degrees for 35 minutes.

Zucchini Chocolate Cake

1/4C butter
1 3/4C white sugar
2 1/2C flour
1/2 tsp baking powder
1/2 tsp cloves
1/2C sour milk (make by adding a little vinegar to milk)
2C grated raw zucchini
1/2C vegetable oil
2 eggs
1 tsp vanilla
4 tbsp cocoa
1 tsp baking soda
1/2 tsp cinnamon
1/4C choc chips

Combine butter, oil, sugar, eggs and vanilla in a large bowl. Blend well. Add zucchini. Combine flour with other dry ingredients and add to mixture, alternating with sour milk. Add choc chips. Bake at 325 for 45-60min.

Chewy Double Choc Chip Cookies

1 1/4C margarine
2C sugar
2 eggs
2 tsp vanilla
2C flour
3/4C coloa
1 tsp baking soda
1/2 tsp salt
2C choc chips

Combine all ingredients. Bake at 350 for 8-9 minutes. Do not overcook. Cookies will be soft. Cool slightly.

Aloha Cake

1 white cake
8oz cream cheese
3oz pack of vanilla instant pudding
1C milk
1 tin crushed pineapple (drain well)
Coconut
Whipped cream
Nuts
Fresh strawberries

Bake 1 white cake. Cream together the cream cheese, vanilla pudding and milk. Spread over cake. Cover with the pineapple. Sprinkle coconut on top. Cover with whipped cream and chopped nuts. Decorate with fresh strawberries.


Banana Bread

1/2C soft brown sugar
2 eggs
1C self raising flour
1/2 tsp baking soda
1 tsp vanilla essence
3 small bananas
100g margarine

Preheat overn to 160 degrees. Beat the margarine and sugar until smooth. Beat in the eggs one at a time. Stir in flour, baking soda and vanilla. Stir in banana. Spoon into tin. Bake for 50min. Cool and cut.

Five Cup Slice

1 1/2C raisins
1 1/2C choc chips
1 1/2C peanuts/walnuts
1 1/2C cocount
1 1/2C sweetened condensed milk

Combine all ingredients. Stir well. Spread into 9x9 greased pan. Bake at 350 degrees for 25-30 minutes.

Chicken and Asparagus Pie

1 tbsp olive oil
750g chicken breast, diced
420g can condensed cream of chicken soup
375ml can evaporated milk
1 can asparagus pieces
1C grated tasty cheese
2 large sheets of pastry, thawed

Heat oil and cook chicken for 8-10 minutes or until golden. Add soup and milk. Stir until combined and heated through. Stir through asparagus pieces. Line bottom of dish with pastry. Spoon mixture into dish and sprinkle with cheese. Cover with pastry and brush pastry with beaten egg. Bake at 200 degrees for 12-15min or until golden.

Brocolli, Rice, Cheese and Chicken Casserole

Rice
Chicken
1 can cream of mushroom soup
1 can cream of chicken soup
30g butter
120ml milk
225g brocolli
cheese

Combine all ingredients. Bake at 175 degrees for 30-35 minutes.


Pineapple Cupcakes

1C flour
3/4C sugar
1 tsp baking soda
pinch salt
2 tbsp oil
1 egg, room temperature
1 1/4 can crushed pineapple in juice

In a large bowl mix the flour, sugar, soda and salt. Beat the egg and oil and add to the dry ingredients. Mix well. Fold in pineapple juice. Bake at 350 degrees for 15 minutes.

Icing:
1/3C cream cheese
3/4C icing sugar
3-4 tbsp pineapple juice

Cream the cheese and icing sugar. Add some juice. Sprinkle with coconut.
